Fumaric acid is white odorless powder or crystalline solid particles, with speical sourness that is as strong as 1.5 times of citric acid. Fumaric acid is soluble in ethanol (5.76g/100g,30¡æ), slightly soluble in water (0.63g/100ml,25¡æ) and in ether, and very slightly soluble in chloroform. Fumaric acid CWS has a very good solubility, which is 65% higher than that of Fumaric acid HWS. Fumaric acid has no hygroscopicity, and Fumaric acid will sublime at 200¡æ.The boiling point of fumaric acid is 290¡æ (decompose). Fumaric acid will turn to maleic anhydride at 230¡æ, and will generate DL-malic acid if boiled with water. Fumaric acid has better emulsibility and stability.
