The wild Palm Civet ( known as an Luwak or Musang in the Indonesia) eats coffee cherries. The beans then pass through the digestive tract undigested and are eliminated. During this process some of the proteins in the beans are broken down, making the coffee much less acidic and delightfully smooth, while imparting a delicate caramel aftertaste.
The beans are then collected, washed in pure mountain spring water, and dried in the sun. No pesticides or chemicals are used. The civets are wild and free to roam the wilderness areas of their habitat and feed from the coffee trees that naturally grow there.
