Fumaric acid is white odorless powder or crystalline solid particles, with speical sourness that is as strong as 1.5 times of citric acid. Fumaric acid is soluble in ethanol ( 5.76g/ 100g, 30 ) , slightly soluble in water ( 0.63g/ 100ml, 25 ) and in ether, and very slightly soluble in chloroform. Fumaric acid CWS has a very good solubility, which is 65% higher than that of Fumaric acid HWS. Fumaric acid has no hygroscopicity, and Fumaric acid will sublime at 200 .The boiling point of fumaric acid is 290 ( decompose) . Fumaric acid will turn to maleic anhydride at 230 , and will generate DL-malic acid if boiled with water. Fumaric acid has better emulsibility and stability.

Usage:
Fumaric acid has bacteriostatic and antiseptic function. Fumaric acid can be used as acidulant, acidity regulator, acidifier, thermal-oxidative resist auxiliary, curing accelerant and spice. Fumaric acid is widely used in producing various carbonic acid drink, wine, concentrated solid drink, ice cream and other cold foods and drink. Fumaric acid can replace malic acid, citric acid, for its acidity degree is 1.5 times of that of citric acid. Fumaric acid can be used as pharmaceutical intermediate and optical bleaching agent, also used in manufacturing unsaturated polyester resin.
The solubility of fumaric acid CWS is 65% higher than that of original fumaric acid. The acidity is 2.5 times of that of citric acid. Fumaric acid CWS has better emulsibility, stability. Fumaric acid CWS can take the place of malic acid, citric acid, benzoic acid and is widely used in cold drink, potables, alcoholic, marmalade, cake, pickle, noodle, bread, etc.
