Pullulan ( Pullulan) is a
natural water-soluble polysaccharide, is an extracellularpolysaccharide produced by Aureobasidium pullulans. It consists of maltotriose by ± -1, 6 -glycosidic bonds to form, is one kind of the same type of polysaccharide polymer, thedegree of polymerization ( DP) 100 ~ 5000, the average molecular weight of 2 × 105, about 480 maltotriose. Pullulan has a very wide range of uses. It has good film-formingproperties, the formation of the pullulan film has excellent oxygen isolation performance, thickeners, adhesives, food packaging, capsule forming agent widely used in food and pharmaceutical industries.
